Our Story

Meet Chef Will Birge

Chef Will Birge is the Executive Chef and founder of MEALBOX. An Omaha native, Will attended Metro Culinary Institute with a passion for food and transformation since childhood. He worked at Kitchen Table, embracing the farm to table movement sourcing directly from local farmers, creating local ecosystems and supporting what’s grown in the natural land. Most recently Chef Will was Executive Chef at the Jackson Street Tavern most known for his flavor packed creative comfort food. He started Mealbox in 2018 with the mission to deliver restaurant-quality, locally-sourced, individually-packaged, chef-inspired meals to the Omaha community. Over the course of time, he transformed Mealbox into Omaha’s premier gourmet meal delivery service and catering service through consistency, creativity, convenience, and quality.


Meet Rachel Birge & The Family

MEALBOX is family owned and operated by The Birge Family. While Will is making magic in the kitchen, Rachel oversees all of the behind the scenes operations. Rachel has her B.S. in Accounting and M.B.A. both from the University of Nebraska Omaha. Multiple staff members are extended family and friends from the local Omaha community.  Will and his wife Rachel recently welcomed a second daughter to their family and have 2 Great Pyrenees pups.


Meet Chef Matthew Moser, Chef de Cuisine

An Omaha native, Chef Matt brings a wealth of knowledge and experience to our culinary team. He graduated in 2005 from Western Culinary Institute in Portland, OR, then moved back to Omaha where he worked at The French Café. From there he spent the next several years at V Mertz, Blue Sushi Sake Grill, Plank, The Market House, and most recently was Executive Chef at Stirnella in Blackstone. Chef Matt leads the day-to-day kitchen, developing new and exciting menus for our gourmet meal delivery service and special catered events, working closely with owner Chef Will Birge. Chef Matt has a proven track record of modern and creative cooking with an extensive culinary discipline and leadership.
